Under the Apron Strings: Nutty Cole Slaw

This recipe is another old favorite that came to me by way of Mama during her teaching days at Giles County High School where she taught cosmetology for 25 years.

As the teachers sat and ate together each day in the cafeteria, they shared stories and often, recipes.

This Nutty Cole Slaw is the perfect addition to any summer cookout or get together.

1 tablespoon salted butter

1/2 cup almonds, slivered

2 tablespoons sesame seeds

1 large package shredded cabbage or

1 pound fresh (red and/or green)

cabbage, shredded

6 green onions — green tops too, chopped 2 packages ramen noodles — throw away

the seasoning packet

1/2 cup olive oil

6 tablespoons unseasoned rice vinegar 4 tablespoons sugar

2 teaspoons salt

1 teaspoon pepper

  • In a small saucepan brown the almonds and sesame seeds in butter. Set aside to cool.

  • Use hands or rolling pin to crush ramen noodles while still in the bag.

  • Place cabbage in large bowl, followed by onions and ramen noodles.

  • Toss!

  • Swirl remaining ingredients in medium bowl or a jar and pour over slaw.

  • Toss again!
